La Diabla Pozole y Mezcal
Denver's pozole house, built on nixtamalized corn and a deep mezcal list
Chef Jose Avila opened this on Larimer in 2021 as Denver's first restaurant built around pozole, modeled on the pozolerias he grew up with in Mexico City. Bowls come red, green or white with the garnishes brought separately so you build the bowl yourself, and the corn is nixtamalized in house. The mezcal list is long and the bar staff will steer you through it if you ask. It is listed in the Michelin Guide and was named a best new restaurant by the Denver Post the year it opened, which explains the weekend wait.
Why go. The pozole is the entire argument, and nobody else in Denver is making it this way.
Wednesday and Thursday it opens at 11am; Monday and Tuesday not until 3pm.
