The Kitchen is the Denver outpost of the Boulder bistro Kimbal Musk and Hugo Matheson started in 2004, and it has held down this exposed-brick corner of Wazee since the early 2010s. The menu is seasonal American, cleanly done rather than showy: a good burger at lunch, roast chicken, whatever the farms sent. It is cashless and pools tips across the front of house, which the website tells you up front. It is the kind of place you take visiting parents or a work lunch that needs to be quiet, and it is two blocks from Union Station.

Why go. A calm, grown-up meal near Union Station when the beer halls are too loud.

Weekday lunch is the easiest table; dinner books up on Rockies home nights because it is on the walking route.
