Alex Seidel's farm-driven restaurant and pantry at the 17th Street end of the station.

Mercantile opened with the restored station in 2014 as chef Alex Seidel's second restaurant after Fruition, and it runs as two things: a European-style market and coffee counter in the morning, and a serious dining room the rest of the day, cooking around what comes off Seidel's Fruition Farms in Larkspur (the sheep's-milk cheeses are the calling card). It won Seidel a James Beard award in 2018. Sit at the bar for lunch if you don't have a reservation.

Why go. The best serious meal inside Union Station, with a pantry worth raiding on the way to the train.

The market counter in the morning is the quiet way in; dinner books out on Rockies nights.
